More about this coffee from Ethiopia

Nestled in the Bensa district, within the iconic Sidama region, lies the Ayla processing station, surrounded by the imposing Bombe mountains. In this exceptional setting, at an altitude of around 2,000 metres, hundreds of small-scale farming families cultivate their coffee trees on traditional smallholdings. The low temperatures of the high mountains encourage a slow ripening of the coffee cherries, allowing the beans to develop an extraordinary concentration of sugars and aromatic complexity.

This batch comprises a carefully curated blend of the native varieties 74100 and 74157, selected by the Jimma Agricultural Research Centre (JARC) for their perfect adaptation to the terroir and their outstanding cup quality. Following a rigorous manual harvest of the ripest cherries, the coffee is processed using the washed method with fresh water from the Bonora River, a meticulous process that removes the mucilage to reveal a clean, vibrant and very elegant profile, in which fresh notes of orange, raspberry and jasmine shine through.

Process - Washed

The beans in this Ethiopian coffee, from the local 74100 and 74158 varieties, are carefully hand-selected to ensure only cherries at their peak of ripeness are used. Once harvested, the cherries are mechanically pulped and undergo a water fermentation process to completely remove the mucilage, followed by a thorough washing that brings out the bean’s maximum purity and clarity.

Variety 74100 offers exceptional elegance in the cup, characterised by a bright citrus acidity and a pronounced floral fragrance of jasmine and bergamot, accompanied by subtle notes of stone fruit. For its part, the 74158 variety complements the profile by adding fruity complexity and a creamy body with an enveloping texture, featuring juicy hints of red berries and a sweet, lingering finish.

Sidama (or Sidamo) is an iconic region situated in southern Ethiopia, renowned worldwide for its high altitudes and ideal climatic conditions for growing high-quality speciality coffee. This area is famous for producing coffees with vibrant and complex flavour profiles, characterised by refreshing citrus notes, floral undertones and a beautifully balanced sweetness. The vast majority of farms in Sidama are family-run micro-farms managed by smallholders, who grow their coffee under shade trees in harmony with the local flora and using traditional processing techniques that ensure the highest quality in every harvest.
